Amazing Raw Coconut Yogurt

I’ve been a massive Thai coconut fan ever since discovering them. They are absolutely amazing in taste and health benefits.

There is no comparison to the old brown coconuts. The old brown coconuts don’t have nearly the amount of coconut water and they are relatively tasteless in comparison. They also contain tons more calories and fat.

Funny story. Recently we were shopping at a local Asian market, the owner who was from the Phillipines told me they actually throw away the brown coconuts.

She laughed at the popularity of brown coconuts among North Americans because she knows that the benefits and taste of young coconuts is far superior. I thought that was interesting.

Besides loving the taste of this coconut yogurt recipe you will also reap the following benefits:

The addition of probiotics will leave your gut loaded with beneficial bacteria that will have a positive effect on your digestive system. It will also help you burn fat more efficiently and keep your inside pipes nice and clean.

The coconut meat is packed with protein to keep you fuller longer.

It’s dairy free: Ever since giving up dairy for health reasons, I’ve felt like I’ve been missing something. This recipe fills that yogurt void in my life and makes a great snack.

It’s sugar free: This recipe has no sugar added but does contain natural sugars which make it delicious. Because it contains both fats and protein, it keeps your blood sugar amazingly stable and you can go for hours without eating afterwards. No crashing.

Plus it’s incredibly easy to make and very versatile. Sometimes I add fresh berries or mix it with cacao powder to make a chocolately mousse dessert. That alone is a reason to try it! Trust me!

4-5 cups fresh young coconut meat
1-2 capsule dairy free probiotic (or several drops of liquid probiotics)
2 Tsp vanilla extract
Juice of 1 fresh lemon
1/4-1/2 cup raw coconut water

Blend all ingredients in your blender until creamy and smooth.

Pour into a glass jar or glass and cover with cheesecloth or other breathable fabric and secure with a rubber band. Leave out at room temperature overnight or 12 hours to allow probiotics multiply.

Refrigerate. Add fresh berries or mix with cacao powder. Enjoy. YUM!
