I’ve been a massive Thai coconut fan ever since discovering them. They are absolutely amazing in taste and health benefits.

Ingredients

4-5 cups fresh young coconut meat
1-2 capsule dairy free probiotic (or several drops of liquid probiotics)
2 Tsp vanilla extract
Juice of 1 fresh lemon
1/4-1/2 cup raw coconut water

Directions:

Blend all ingredients in your blender until creamy and smooth.

Pour into a glass jar or glass and cover with cheesecloth or other breathable fabric and secure with a rubber band. Leave out at room temperature overnight or 12 hours to allow probiotics multiply.

Refrigerate. Add fresh berries or mix with cacao powder. Enjoy. YUM!
